Tofu Bhurji

Ingredients
- 400g firm tofu, pressed and crumbled
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 green chilli, chopped
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric
- 1 tsp coriander powder
- 1/2 tsp Kashmiri chilli powder
- 1 tbsp oil
- Coriander leaves
- Salt and lemon juice
Steps
- Heat oil and crackle cumin. Add onion, green chilli, and ginger-garlic paste; cook until the onion softens and loses its raw edge.
- Add tomato, turmeric, coriander powder, chilli powder, and salt. Cook until the tomato breaks down into a thick masala.
- Fold in crumbled tofu and cook for 3 to 4 minutes, just until hot and coated. Finish with lemon juice and coriander; serve with roti, toast, or rice.
