Bajre ki Khichdi
Pearl millet and moong dal cooked together with cumin, ginger, and green chilli into a simple Rajasthani one-pot meal.

Ingredients
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp ginger, finely chopped
- 1 green chilli, chopped
- 1/2 cup bajra
- 1/4 cup split moong dal
- 1/4 tsp turmeric
- 1 pinch asafoetida
- 1 tsp salt
- 4 cups water
- Coriander to finish
Steps
- Rinse the bajra and moong dal well, then soak briefly if you have time.
- Heat oil in a pressure cooker or deep pot and crackle cumin seeds.
- Add ginger and green chilli, then stir in bajra, dal, turmeric, asafoetida, salt, and water.
- Pressure cook until soft, or simmer covered until the millet and dal collapse into a thick khichdi.
- Adjust with a splash more water if needed and finish with coriander. Serve hot with ghee, curd, or pickle.
